Well, it's been about 2 months since I last updated our blog. Really, has it been that long? Where does the time go? But, a lot has happened in that 2 months. We finally moved into our own home over Easter weekend. Joy, joy, joy! So we have been busy cleaning and getting organized. Something about seeing other people's dirt, just sends me into cleaning overdrive. My sister inlaw, Hayley said it's sort of like getting rid of the previous families energy and replacing it with your own. Sounds better and sort of makes sense. We are about a 10 minute walk to the beach, which is really beautiful. On Sunday's we all go for a walk on the beach and get a Mr. Softie ice cream. We call it Mr. Softie Sunday. They're really good, if I had to compare them to anything back home it's like a soft serve ice cream at Dairy Queen or McDonald's.
A couple of weeks ago, we went to Jersey (neighboring island) for the weekend. Its probably been 13 or 14 years since we've been there. It felt like being in a European city rather than another island. It's just that little bit bigger, but felt so different. They have a big conservation zoo, that's home to lots of endangered species. We went to a place for lunch on the beach and Shelby had some BBQ ribs that I'll have to say were pretty darn good.
Shelby & Harrison continue to do really well in school and have made lots of friends. Lots of birthday party invitations. Harrison's class started swimming this week. I'll have to say I was very nervous leaving him in someone else's hands in a pool without being there. But, they have lots of parent volunteers and teachers there to supervise. Hopefully, they'll have him swimming without floaties by summer. Shelby has been swimming at school since November, so she's becoming very confident in the water.
My job is going well. I can't say I've introduced my group to many of my favorite recipes. But I have been introduced to some old British favorites including: corn beef hash (mush) and bauble & squeak (mush). I guess when your in your 80s & 90s and your teeth don't work as well as they once did, you just don't want to try new things. I have mastered dumplings though and make them chicken & dumplings like my Grandma use to make and they're always a hit. Their a bit more adventurous with their desserts though, so that's where I get to be creative and have fun.
I guess everyone back home is starting to make summer plans. Kids don't get out of school here until the end of July. Shelby's very bummed that she has to go to school on her birthday. Sadly we won't make it back to the States this year, but will next year. But, we have a spare room if anyone wants to come visit ;o) I was talking to a lady in the grocery store today that asked me where I was from. This lady had been all over the world, honestly - everywhere and she was just baffled that someone from America could come and live on this tiny little island. It is small, yes very small. But, I said you know its like living in my 2 to 5 mile radius back home, how far do you really venture away from home on a daily basis? The negative is that you can never drive outside that radius here.
We're doing good though. Enjoying some beautiful Spring weather all the flowers are in bloom. There's still a few daffodils around, lots of tulips - which I love and I can buy fresh flowers from the side of the road for a pound.
